Varietal Fun Facts: Tom uses these four traditional Portuguese Grapes in his desert wine, Solera, a fortified wine that is big, bold, and clean with a hint of sweetness. For the Portuguese Suite Tom allowed the fermentation process proceed to dryness. It possesses the same big, bold, clean taste without the sweetness. Both are good, it just depends on what you palate is craving.
